To restore your GB backup you need to go back to GB first. Same thing with JB backup, you need to install JB first. Partitions are different, CWM Backup/Restore won't repartition your phone. Similar thing with flashing ROMs - from GB you can flash back and forth different GB based ROMs, but once you flash JB it will repartition your memory and going back to GB is possible only with Odin. Once you have JB 4.2.2 running you can flash any other 4.1.x - 4.2.x (same partitions), but if you try JB 4.3 (CM10.2) it will again repartition your memory and going back to 4.1.x - 4.2.x is a little longer process (back to stock -> flash corn kernel -> flash JB once to repartition -> flash JB second time to install ROM).
Flashing kernels - make sure you are looking at the right kernel for your Android version, download *.zip file, flash in Recovery, reboot. In my experience Devil 4.2 and Semaphore 3.0.0 work best for JB 4.2.2 based ROMs. Gear/CyanCore are modified Semaphore. I don't like too much tweaking though. You can't make Captivate run like S4, playing with kernel settings usually brings nothing more but stability issues.
Just don't kill your phone with too much flashing excitement, read carefully installation instructions for every ROM you want to try.
