Gingerbread is known to be laggy because of motoblur. You can always unlock the bootloader and install a custom ROM. Read up on everything before unlocking though you don't want to brick your device.

I had the same issues on Froyo recently, but all I needed to do was wipe the Dalvic Cache for my phone to feel new again.

Plus I doubled my available memory as an added bonus... ;)

Stock Gingerbread is faster than Froyo. It just doesn't seem like it at first most likely because it has to build up its caches and things like that. Have you tried giving it some time? Yes there is Motoblur and crap with it, but Gingerbread really is a ton better IMO than Froyo was. If you wanna see what the Atrix can really do get off the stock ROM and switch to one of the custom ROMS we have in the development section. As posted above, make yourself familiar with unlocking the bootloader and rooting your phone. These can be achieved by reading through the article here http://forum.xda-developers.com/showthread.php?t=1154600
Good luck and happy flashing.
