I've only tried the EOS and CM kernels (included with ROM), but from those two, CM has performed better on my MZ604. Faster, less lock ups and slightly better battery life. Currently OC at 1.2Ghz.

Can I use the CM kernel on stock rooted jelly bean ROM ?

I don't see why not. You'd have to extract the 'zimage' file from the ROM zip and flash that. Use fastboot if you are comfortable with it. If I have time later I will make and post a flashable zip file. In the meantime you could Google how to do that, it is fairly simple.

I'll give it a go later anyway, how do I overclock that kernel and what's the most stable Mhz for the Xoom 1....

Will that kernel work with a rooted stock 4.1.2? That's what I'm running right now but I can't overclock the CPU or mount the SD card...
