Actually I left it in my first try, then deleted it in my second, but the result was the same. From what I understand of the scripts, it shouldn't matter, though… or does it ?
Ah, so I am out of hints.

Just to be sure, from the beginning:
On stock ROM.
Flashed twrp as ap and vbmeta as user data in Odin

Booted recovery, advanced, terminal, two times written multidisabler, wiped data - yes, rebooted recovery.
Flashed this packed gsi, wiped data, rebooted os.

This is how you did that?

Yes, that's it.
I'll do it once again just to be 100% sure.

Ok guys,

just tried to update without wiping, keeping TWRP and Magisk, here is what worked:

1) Download new firmware with Friya
2) Extract AP, put it on the phone and patch it with Magisk
3) Bring patched AP back to PC and flash with Odin (BL, CP, Home_CSC, patched AP) tapping NO REBOOT
3) Manually reboot to download mode (WARNING: if you miss this, you'll have to wipe)
4) Flash with Odin TWRP (in AP) and disabler (in USERDATA), tapping NO REBOOT
5) REBOOT to recovery (WARNING: if you miss this, you'll have to wipe)
6) Tap ADVANCED, TERMINAL, run Multidisabler twice, wipe cache
7) REBOOT to system

All done! Thank you!!

Hello ! I'm afraid I've semi-bricked an S21 by doing the following :
1. Unlock your bootloader.
2. Download S21: o1s.
3. Reboot to download mode
4. Put the TWRP TAR for your device with Odin in the AP slot, vbmeta_disabled_R.tar in USERDATA slot and click start.
5. Reboot to recovery via recovery key combo (Vol up + power + USB connected).
6. Disable encryption:
- Go to Advanced > Terminal, type: multidisabler.
If vendor complain about free space left on device, will attempt to resize vendor. and it ask to - Run multidisabler again!.
- Type: multidisabler again. will see - Finished. when done.
- Go back to Wipe > Format Data > type yes.
- Reboot to recovery.

(so far so good)

However, as I did not have a Magisk apk handy, I rebooted to the OS.

Later, I flashed an /e/ OS GSI onto /system from within TWRP, but now the phone will keep rebooting, alternating between two Samsung screens :
"This phone's bootloader is unlocked and its software integrity can't be verified. Any data on this phone may be vulnerable to attackers. Don't store any important data or sensitive information on this phone."
then
"This phone is not running Samsung's official software. You may have problems with features or security, and you won't be able to install software updates."
… and then reboots again and again.

Problem is : I can neither power off nor reboot to recovery/bootloader mode, so I can't even flash back to stock.

I *can* reboot to bootloader unlock mode (hold volume up + volume down and insert USB cable), but that's pretty much it.

Can anyone help ?
SOLVED !
Here's the cause : https://github.com/phhusson/treble_experimentations/issues/2006#issuecomment-933768890 : I tried to flash an Android 10 GSI on top of an Android 11 base system (/vendor ?). :(

I then downloaded and put https://leos-gsi.de/downloads/LeOS-R-GSI/Sep/Sep-RW-mini-bvS.img.xz (Android 11) inside the GSI Flasher from https://xdaforums.com/t/how-to-make...ung-galaxy-a51-super-partition-image.4216083/, and presto! my phone was ready in a minute !!! :D

Thanks to all those who helped me : @vlubosh @afaneh92 @Vailskier

Team Win Recovery Project 3.x, or twrp3 for short, is a custom recovery built with ease of use and customization in mind. Its a fully touch driven user interface no more volume rocker or power buttons to mash. The GUI is also fully XML driven and completely theme-able. You can change just about every aspect of the look and feel.

Code:
 * Your warranty is now void.
* I am not responsible for bricked devices, dead SD cards,
* thermonuclear war, or your getting fired because the alarm app failed. Please
* do some research if you have any concerns about features included in this ROM
* before flashing it! YOU are choosing to make these modifications, and if
* you point the finger at me for messing up your device, I will laugh at you.

Supported Models:
Galaxy S21 G991B/N.

Download & Guide:

Hii,
I followed the instructions completely
but after installing twrp it won't enter download mode
I can't make any changes from twrp, there is no read-only uninstall option
what should I do?

Did You try reboot to download mode from twrp? You can try power off and volume up+down and plug in USB to PC

I tried all of them.
Before installing twrp I was able to login.
After installing twrp it does not enter at all.
I try with Samsung 300K Tool, I try with Magisk, the phone opens directly.

Ok, first you need usb connected all the time you reboot to recovery or download mode.
Download mode: press both vol buttons while usb connected when you reboot and screen goes black.
Recovery: press volume up and side key while usb connected.

I do the same, but the phone is opened directly.
I have s10 plus and twrp is installed but there is no such problem.

I was able to access both before installing twrp
now i can only get into recovery partition
download section does not open
I wanted to change the twrp, the phone never opened, I sent it to the service, the main board of the phone was broken, they sent a new one.

Follow the instructions again and you will be ok.
To make sure you flashed the correct recovery, device is G991B and codename is o1s.
