This phone is intended for the Chinese and Indian market, the India version can be multilanguage but for the moment no rom is available.
There is little or no development for Media Tek Socs.
The phone is very recent, it is possible that it will come out in a global version later, which would allow you to have the French language, you must wait.

2) Get fastboot India ROM in MIUI Downloader (Google Play Store)
3) Flash Redmi Note 12 Pro in fastboot mode connected to PC running MIFlash
