A screen was broken on my ultra so I sent it to the official service center to get it repaired, I've requested them to backup and restore my data which they did and everything went fine.

But it has later occured to me that they were able to backup data even though the phone was encrypted and locked (I didn't unlock it beforehand). They also restored the backup with encryption and lock disabled. Now what I'm wondering is how were they able to bypass encryption and screen lock?

They have a tool to remove screen locks. It's a service in service centers in case of an emergency, and if you can prove you're the owner. Even Apple can do this.
Are there any details on how that works exactly? Sounds like something that could be abused a lot if fallen in the wrong hands.
most repair places ask you to turn off the screen lock, did you give them your pin or password?
