I'm not sure if it is possible or not, but can you make new fonts that you can flash? I would really like the windows phone 7 font/Zune font. I think that would really make the SGS3 pop.

if it's a .TTF you can try adding it to /system/fonts and reboot (not sure if reboot is necessary). Obviously, you'll need to be rooted to do this
