There are a lot of guides and stuff for people wanting to do specific things with their phone. I am selling mine and want to go back to stock. What's the best way to do so? I'm not sure if I should also lock the bootloader since I'll be selling on swappa or just leave it be as it may be a selling point? Appreciate any input.

If you are talking about a OnePlus 7 Pro, then by far the best way to restore it to stock is to use the OnePlus EDL package or unbrick tool. This will restore your phone to new state (just like when you pulled it from the box).
It will also wipe any personal data you may have.
Download the appropriate archive for your phone below.

Instructions:
Extract the downloaded archive to a folder on your PC.
Power your device off
Maintain volume up and volume down keys to get into Qualcomm EDL mode.
Connect phone to your PC using a USB C cable
Launch MsmDownloadTool V4.0.exe.
Click on Enum to be sure your device is detected and press Start.
Wait ~300 seconds
Enjoy your brand new device
