Couldn't find anything on the subject...

Coming down from CM11, TWRP installed, wiped system, cache, and dalvik (NOT data because I don't want to lose my photos if possible).

Hangs on Samsung Logo screen.

I've done the wipe / reinstall twice now.

Any ideas?

Furthermore, my only reason for leaving CM11 is to get a Touchwiz ROM to perform a profile update, so if there are any suggestions on a very small, lighweight TW ROM that would work for this purpose, that would be fine too =)

You need to a Data Wipe/Factory Reset. Wiping data won't delete your photos or anything on your SD. Make sure you make a nandroid backup first.

I assume "Nandroid" = TWRP backup, which I did.

I'll move the photos to the SD Card and Try again after wiping data.
That did the trick, just had to format data. Got the profile updated and I'm back on CM11 for now.

Just so you know wiping Data only wipes app data not personal data

Yeah I was a little confused on that point because there appear to be two different "data" wipe options. I went ahead and just backed everything up to my PC and wiped everything, the whole system, just to be safe.
