You could give famigo gapps a try.
Not only do you get to pick the exact gapps you want, you can also pick what built in apps, from the most popular roms, you don't want installed.
For example the three you mentioned can be removed whilst flashing the gapps.

Had to restore previous update. The Simpsons Tapped out crashes as soon as I opened it.

Really nice ROM! Just wish that GEL stopped forgetting whatever I dock on the bottom-right of the screen but that's not ROM related.
I did notice that Simpsons Tapped Out wouldn't even run (force closed) when I try and run the game. It works flawlessly on the CM11 Nightlys, not sure if it's something that's been changed in Mahdi's that's caused it to stop. I tried several reboots and reset/cache clears.

Im wondering nobody noticed this...since the last update my system language was changed to english and it isnt possible to change back to german. Its not a big thing to me but its pretty curios.
Same with german

And I have the same issue, some other guys have with system language. But no real problem
