Great, I just flashed the rom and my phone is soft bricked. It just gets to Fastboot over and over again. Am I doing something wrong?

Im on LOS right now. It booted without issues. What do I have to do to boot this ROM?
I mean, do I really have to flash a stock ROM over and over again every single time? what?

You don't need to flash Stock ROM !
Can I ask you which one of stock ROM you have flashed before flashing LOS ? It it's MIUI10 EU 9.8.1, you just need to :
1. Reboot to TWRP
2.Format Data
3.Reboot to TWRP again
4.Copy any ROM you want to flash into your phone
5.wipe cache/dalvik cache/system, then flash ROM
6.If ROM without google play services, then you can flash Gapps. If ROM with google service, skip this step
7.Reboot to system and finish ROM setup

You need to flash an MIUI version coming from LOS since it uses it's own vendor unlike other ROMs.

I think your ROM with problem about wifi or LTE connection when going into initial setup !
No network and it keeps showing circling when setup ROM...

Use MiFlash to reinstall MIUI and then go from there. You should then be able to reinstall TWRP and do whatever you need to. Make sure not to relock your bootloader with MiFlash, there is an option at the bottom.
