Yes, you can flash other ROM's after updating to 5.0.

Correct, the debloated version is made to my personal preference. I backup my contacts on my pc therefore removed the google contacts sync app. You can use the un-debloated rom and edit the debloater script before running.

Yes, but you do not necessarily need to use Odin. The ROM will update all partitions to 5.1.1 except recovery. If you want to update to the OF6 stock recovery then you can flash that .tar in Odin.

and I can just odin the nek2 boot image to root and it will still boot to root it then flash the new boot.img to get back to normal. That is the part that I am unclear on.

if you like to use mhl adapters for your tv or car it wont work with 5.1.1 update

I have not looked at your modded .zip, instead I put the following G900T_OF6_DeBloater together. I think people may find it esier to edit.

1. Extract the G900T_OF6_DeBloater folder onto your desktop.
2. Use notepad++ or any text editor to edit the debloat.bat file to your liking.
3. Boot into TWRP, Press "Mount" and make certain that "system" is checked.
4. Connect your phone to your PC while still in TWRP and double click on the debloat.bat file. Done!
