If it helps any, the simplest method to enter download mode (provided the download mode partition hasn't been corrupted or replaced) for LGUP to work is:
-power off device
-hold volume up, plug in usb (to pc)
You can also get there by holding volume up and powering on or rebooting the device, but the timing of when to release what is a little trickier.
I can enter download mode just fine. I just cant get to \system.

thank you! I was actually able to finally get it to pick up on LGUP and it did something but the tablet still reboots to TWRP every time?
The system partition is always unchecked in MOUNT after I check it, and mount /system is the only error when I try to reinstall the rom. Other than that its functioning fine... Just cant seem to figure out how to mount the system?

Im having all the exact same problems you are describing. LGUP cant recognize the device. Failing to mount \system, etc. Everything just the same as you. I have tried all the exact same things. Let me know if you find a solution before I do.
good news if you havent already got your device up and running again, try this...
Pry off the back of your tablet and unplug the battery cable. (I was able to unplug using a bobby pin that I slid under the battery connection wire and then pull straight up. It just pushes back in like a snap.)
download LG Bridge
download LGUP
Leave unplugged for 5 minutes.
Plug in the USB and connect to pc
Now with the USB plugged into device and PC, reconnect battery to device while holding the +Volume button
This should take you to a screen with a USB icon as big as your screen that shows a progress bar at the bottom and says 'UPGRADE FIRMWARE' or something similar.
If you see that screen you should be able to open LG BRIDGE
LGBridge will tell you that you can update firmware, do that!
Let it run its course and reboot istelf.
When it comes back on you will see a screen asking you: language settings
Congrats your device is a device again!

From there I used LGUP to install a .dz ROM which took me back to LG V521 V10c
from there I am restarting the entire root and custom rom process *fingers crossed

I followed these instructions step by step:

Hope that helps. I am a newbie so if I wasn't supposed to link that thread or add a user name, I apologize and will remove if needed.

I have tried every which way I can. All it does is starts up in TWRP. Ive pulled the battery, held down power up, etc etc. I can get to fastboot mode or TWRP, but LGUP just cant seem to recognize the device no matter what I do. I think all the partitions are somehow corrupt. I likely made a brick. Im going to try loading a .dz file to an sd card and use that.

EDIT: SUCCESS! I finally got it to work. I was using my Galaxy Tabpro S which apparently doesn't work through the USB-c port. I went to Bestbuy and bought the cheapest open-box PC I could find and that worked.
