How do you change ktweaker app to run the kernel on stock frequency & voltage. I know I can find it by looking thru the app, but my phone freezes within 20 seconds of booting up. I know it's the kernel cause it runs great on stock kernel. I won't have time to look around & figure out where exactly I have to go to change the settings to stock settings, before it freezes up on me.

Yep, if it were me I'd flash the stock kernel, wipe cache and Dalvik (always after kernel or modem flash), boot, wipe the data for the KTweaker app, then you can reflash the KT747 kernel, etc.

Try and boot into safe mode. On the s3 power off the phone hold volume buttons down both up and down and boot your phone (still holding the power buttons) and you will boot into safe mode when the phone boots up you will see safe mode in the bottom left corner.

For this launcher, no. Here's the stock launcher 5x4- http://forum.xda-developers.com/showthread.php?t=2754399
You'll have to remove the S5 Launcher first.
