I've not messed about with ROMs for long time but am I right in thinking I can make a full nandroid backup of my current setup, format everything and install LineageOS 15 to see how things are then restore my nandroid backup and my phone will be exactly as it currently is?

Yes just do a backup via TWRP,but i wouldnt install Lineage 15 its not even booting yet..

Finally got around to flashing the newest version and love it! One small issue, when I take a photo with the camera app, the picture looks like it's been split in half. Anyone got a fix or any suggestions?

Just spotted a new build by BeYkeRYkt 17 05 2018.installed it straight over the last build(no wipes), working fine.even flashlight is working now.thanks for releasing this build.
