Hi,

A new update is out and the device offers me the update in OTA... I also have downloaded the full rom on the website. I have stock rom with root with magisk. What is the best way for installing a update with the root ?

Also after the update the tablet will become encrypted again or not? If yes what you need to do

It will not be possible to update via OTA when the bootloader is unlocked, therefore, only by installing the full firmware via Smart Switch or via ODIN.
Yes, after the update, the memory will be encrypted again, since the firmware will be stock with a stock kernel, stock recovery and stock (without patch) vendor section.
I am doing the update like this:
I am flashing through ODIN the firmware with the HOME_CSC part. With the PASS display, I fold back the cable and carefully look at the display, how the device enters the recovery, installs the update, does the erasure and goes into reboot. First, a warning appears about the unlocked bootloader, I press any volume button and see the menu, where I select the Recovery item and briefly press Power. The device enters bootloader mode, I connect it to the computer and upload the TWRP file and the bootloader from the 9 android. From TWRP I install Fix_vendor and Magisk.zip and you can boot into the system ...
P.S.
If you do not allow the device to boot into the system immediately after installing the update (stock firmware), then the memory will remain encrypted, therefore this is the procedure described above ...

I am not sure what you want to mean with this : I fold back the cable and carefully look at the display, how the device enters the recovery, installs the update, does the erasure and goes into reboot.

After the update with odin y ou need to flash twrp again and go on it for flashing the vendor fix and magisk right! Yeah is a bit hard to go to recovery after the flashing.

The main thing here is not to miss the reboot so that the device does not enter the system ...
How to enter TWRP abowe is a link to the message where it is described.
