Probably. I can't really remember. I haven't used MIUI for many many months. I prefer a clean simple Pixel/Android experience.

Because i hate MIUI in general. Normal AOSP gestures work best for me.

DPI 711 its the default on this gsi.

I want this feature too. I also really want to get out from MIUI. I like having total control of my device and MIUI doesn't seem to give me that. Tried GSI, was great but the pen did not work
I might be wrong but I'm getting the feeling that neither Xiaomi nor the community is really active on the Xiaomi Pad 5.
Thus, I'm trying to get myself the feature I want.

I don't know anything about Linux/Android kernel but I want to give a try to figure out how to get the pen work.
I can't promise anything but I may have a clue for the keyboard. I'm pretty confident that the pen is hidden somewhere too.
Unfortunately the documentation seems non-existent (I builded the doc) and I can't read Chinese, that might have been useful.

There are a range of potential GSIs to use PE is one of them.
There are others e.g., Lineage.
You'll need to try a few and see which best meets your needs.
I am currently using PE on my Pad 5 and happy with it.

Multitasking gestures. The three finger slide to home or the slide to change the window to the previous app.
