SamsungApps a bit tricky, I notice it install another copy to /data/app after you update it, and it was name as com.sec.android.app.samsungapps-1.apk, I try add icon change there at VRTheme but it not working.

So, what I did was, using root explorer delete the SamsungApps.apk at /system/app, then move the com.sec.android.app.samsungapps.apk from /data/app to /system/app and rename it as SamsungApps.apk. Set correct permission, and finally restart to recovery and re-flash again the VRTheme.

I don't have SamsungApps.apk under system/app, only got com.sec.android..... under system / app
After delete it, under data / app don't have com.sec.android.samsungapps.apk at all :(

If working fine, no need do above step.

You need check default you got SamsungApps or not, and where it locate either /system/app or /data/app.

Browse by looking at the icon style as if it at /data/app, name could be slightly different.
