Ya,
for the S8/ S8 plus

can we select which to optimize using the build in device maintenance?

One of a very disadvantage is when i select optimize, it will clear all the cache.
Even the cache in Dropbox, so the files(thumbnail) needs to be download again.

Can we select what cache to be deleted?

This issue is very vital for me as well.
For instance, I use a very useful app called Call Dispatcher. It lets you identify which mobile carrier you are calling when having an outgoing call and which mobile carrier is calling to you when having an incoming call. Thus, built-in optimiser deletes databases of the Call Dispatcher every time and I got to download them manually.
We have to look for a decent 3rd party optimiser.
The coolest one is the SD Maid; however, only for rooted devices.
So CCleaner does not work on any Android that is higher than 5.x.x
Clean Master is an advertisement monster that even slows the system down.
I have been using Clean Android 2017 but it leaves much to be desired.
There is 1 more way. We can wipe dalvik/cashe in recovery once a week, but I am not sure whether it clears comprehensively.

It seems that link2sd is designed for absolutely different purpose though.
but you can use it to clear cache (and even has a whitelist to exclude apps that you don't want to clear cache for)
worked perfectly on my nexus 6p but with the s8+ it basically is not doing anything at all

ok, i see
meanwhile you can try Clean Android 2017 from the playmarket and report on results as well...
it clears my cashe and i can create white lists there too.
