safest way to clean rooted phone?

Hi,

First I want to thank XDA and the members for everything, I'm a bit ashamed to post a question because so much information is available in the various topics and on the net.

But to much information kills the information :laugh::laugh::laugh: (power Noob inside :D)

I rooted my Note8 3G GT5100 N5100XXBMC8

Since a few month it randomly do an soft reboot, especially when installing or updating apps... I'm used to it but I want to sell my device, the buyer wants to keep it rooted but I have to clean it first.
Last time a made a big mistake with my rooted Note2: factory restore... at the moment I hit OK twice I knew it was a bad option :D
I didn't managed to unbrick it, so I'm pretty stressed to do the wrong choice.

Some are telling to make a Nandroid backup, other TWRP etc... I did the first but can't find any .img backup image to restore.

Reflashing should be the cleanest way but I'm not confident to do it, that's why I'll try to clean it by uninstalling everything, remove obsolete files: good option?
With Windows systems it should no be a problem but Android it's another world :D

What should I NOT do to avoid bricking my tablet?
I guess I can install a firmware for GT5100 3G 32Gb from another country or not? I'm from Belgium, what if I install one from Greece or India? Changing the language should be enough.
My device have no simlock

About language, if someone can help me in French or Dutch in PM, it would be fantastic because my english is more than basic :eek:

Or will you advice me to unroot my device?
