Ive upgraded to 4.1.2 and there was a pop up to choose which app to launch and I mistakenly choose the wrong app and clicked on always instead of just once now. How does one reset it to show the pop up again?

As explained by the dialog box that pops up when you do so, go to Settings->Applications, find the application that you mistakenly set to default and tap it, scroll down a bit->Clear defaults

thanks, how bout in minimalistic text' text to speech? the clear default is greyed out. I was gonna use text to speech using samsung speech rather than google text to speech when i click the widget but now it always defaults to google text to speech. I tried uninstalling it and installing it but no luck whatsoever

How about go to settings> > language and keyboard > text to speech output
