All, @dandroid7 has reached out to me for help finding a root method. I have successfully found workarounds to root several 4.4 locked bootloader devices and there is a chance I can help. However I need someone to send me the MF1-to-NI2 OTA update.zip if there is one out there. Someone can also try to Odin back to MF1, root, then pull the update and send.

This is the closest I've seen to that and that file can be downloaded here.

As I've mentioned in that thread, I was able to root an AT&T Galaxy S5 by using Odin to flash a signed version of an older kernel, root with Towelroot, and then restore the original kernel, but I don't think the OTA firmware has what is needed to restore just the kernel to the 4.4.2 version.

Perhaps the patch to the kernel could be applied separately after root is achieved with the previous kernel version but I don't own this model of the Note 8.0 and can't test that.

The kernel swap/towelroot method is exactly what I had in mind and I can create the NI2 stock, signed kernel using the MF1 kernel and NI2 OTA but I am missing the MF1-to-NI2 ota.zip (that file you linked to is the MF2 to NI2 ota). I can even work with the MF1 to MF2 ota if someone has that.

Also, even if I get the correct files and create the kernel there is a good chance that the device will not boot using the MF1 kernel and this is all for nothing but worth a shot.

@K1979C20 figured out that king root 4.1 works to root 4.4.2 on the sgh-i467. I just rooted using that app, then used an app called "supersu me" to switch from king root to supersu... I have root!

Now we need to figure out how to port/flash a rom...

I have signed up to beta test for the flash fire app from @Chainfire, so even though we don't have a Normal recovery like twrp/cwm... we still have the possibility to flash a rom using flashfire.
