Agreed with you guys on that, I also find these handy:
*All root apps (SU, RM, CWM)
    *Docs
*FishBowl Photo Gallery (Brilliant gallery replacement instead of AOSP one on CM7)
*MX Video Player (Replaces stock AOSP CM7 app)
*PowerAMP with unlocker (Replaces AOSP CM7 Music app)
    *Shazam
    *WhatsApp
    *SpeedTest
    *TB
    *YouTube
*Swype (I prefer Swype over the AOSP GB keyboard with CM7, and it's really fast!)

i use quickpic gallery, the best one for me, if you didnt, try it :)

System Tuner Pro (The Best! All-in-one tweaks/monitoring tool, excellent support)
    Opera Mini Next (The Fastest)
    LightLaunch (The Lightest launcher)
    Tasker (Of course...)
LBE (Permission monitor, also sustitute of DroidWall if you trust it)
    VX Connectbot (With scp)
Folder Sync (Backing up images to a service, music to another, documents to mine throught WebDav, etc)
Gotasks (Simple task list that sync with Google)
Hikiplayer Pro (Lightweight, simple & elegant music player)
    Quickpic (Best in his category)
Soul Movie (The only that open Opera Mini video links)
TweetDark (TweakDeck with black background. Lightweight Twitter & Facebook client)
    Whatsapp Plus (No needed description)
IM+ Pro (Having problems with push mode, slow, ugly, also support is horrible, but the only with all I need)
Camera360 (Buggy but nice for effects to increase our poor camera)
    Handy Scanner (Great tool)
    2
Might as well add my own :)

    Dropbox - Neat cloud storage
ExDialer - Really nice and fast dialer application
Alarm Clock Xtreme - Amazing alarm app that has a lot of per-alarm options
ES File Explorer - One of the best file explorers. Bonus: Free and offers root exploring
Wolfram Alpha - Very nice thing (lol), for when I need a quick look up of stuff (usually math)
Quickpic - One of my longest lasting apps. Best gallery app out there.
Titanium Backup - Does this one even need a description? :p
Touchpal keyboard - In my opinion, the best keyboard out there. Has lots of neat little tricks that prevent me from switching.
Rotation Locker - Nice for when I'm lying on the side in bed :D
PlayerPro - Very good music player (latest versions seem to be very "heavy" and battery draining though :()
Cerberus - Amazing anti-theft app (well, post-theft app, doesn't really prevent thefts :p), that I got for free, thanks to me making translations :)
DroidSheep - Useful for "testing" an unprotected WiFi
Opera Mini - The smoothest browser I've ever tested.
LP Sense Slate - Pretty accurate clone of the original Sense clock, comes with the Slate skin for LauncherPro widgets
    XDA Premium - Obviously :p
