Flashing SuperSu via TWRP when device is encrypted leads to error "Can't mount data"
So no SU possible, no Full (advanced) Wipe possible. Maybe have to reflash whole StockRom via Odin.
Can you mount data in twrp and browse it via file manager?

No, unfortunately when going into the "Moun" section within TWRP, it is not possible to tick the "/data" checkbox.

I think I will go back to 5.0.1 via Odin since MM contains a strange behavior (and hope, the encrypted /data partition will not lead into further trouble):
When opening a file (e.g. a pdf) user is asked which app should be used to open the file. Opting for one app (e.g. printer) this will be taken as standard. From now on this chosen app will be used every time when opening this kind of file.

This trouble easily solved by small modification of framework.jar.

Is it possible to downgrade from 6.0.1 to 5.0.1 from odin ?
I read somewhere it's not possible to downgrade once you've upgraded
Because I feel marshmallow has lots of bugs and wanted to go back to lollipop

It's possible bit you'll need to wipe your device.
