i found in OS that you can activate touchscreen test:

1- go in preferences
2-go down to "About"
3-go down to general informations
4-select it many times until you have "dev lab activate "
5-now you shoud have a new menu "Laboratory" at the botom
6-go down to pointer position and activate it
7- now on touchsreen, if it works, you should see a little square at the place where you're pressing and multipoint while scrolling.

The touchscreen works on ultra mode so this is deferentially a software bug. That a front line costumer support sugest to return it doesn't make it a hw issue. Said that I have returned mine because it was still possible and I don't know when they will fix it.
No issue yet on the replacement unit

Ok, yes, true that most probably it's a software issue, but not definitely. It could be that ultra mode uses 1 touchpoint and smart uses full capacitive screen, and as not working properly, the driver fails. It could also be that what Amazfit said about having 2 chips is true (one for ultra and one for smart) is true, and so that's why one keeps working as expected.

We'll see when we'll get more info, but just in case I think I'll try to return it.

So, finally I've returned the watch to the shop in Aliexpress... They didn't wanted to refund my the whole price but after threatening them with EU warranty laws, they agreed... Now I have to decide if I'll go for the same watch or a new one. Most probably a new one, but I can't seem to find anything with the same battery life and that it is actually smart (with an OS that supports apps). Any ideas?
