Hey not sure if this is still relevant but I'm able to get into Download mode into my H812 using a slightly different method than the one I tried originally. If I just power the phone down completely and hold Vol-up and plug the cable into the computer (don't push power) it boots into Download Mode. I wasn't able to see any connected devices in fastboot but I have to play with it and see if I have the correct drivers installed - I was able to use LGUP to flash a KDZ but not sure the difference.

See photo below - the text in the small box at the bottom isn't visible due to crappy camera on my tablet but it's "USER G70"

Now if the American variants (barring T-Mobile) didn't have anti-rollback, I'd gladly test this. Even if we manage to circumvent the anti-rollback measures, we'd then have to figure out how to enable fastboot.
Now i hve done it on my sprint vrient.
I can nuke my laf partition and boot to fastbook but no more than basic commands are accepted. And i also lose dl mode til i restore orig laf partition

The state of my hack (2017-03-13)
  1. FULL takeover/hijack of boot -> DONE (the modifications required are not voiding the Android boot signing chain!)
  2. replace RAM disk -> WIP (most parts done)
  3. boot own RAM disk -> WIP (booting already!!! FIsH's concept works and most parts done here as well)
  4. boot efidroid instead of TWRP -> not started yet (waiting for the testers feedback)

First ALPHA release was send out to the alpha testers just NOW... I'm very excited how it works for them.. :fingers-crossed:

well yes.. when twrp boots up /system isn't fully ready for it. keep in mind that hack is totally brutal (that's why i named it "Fluffy Incredible ..." ;) lol)
when you can mount system manually then all is good ;)
you can open the file manager in twrp (advanced -> file manager) and browse to system. it should contain a lot of folders after you mount it manually.
if that is true just ignore the message.

keep in mind: do not touch boot or recovery partitions. you can backup them without any harm and even restore (well .. untested!) but do not modify anything there (just a reminder because its so important ;) )

Thanks @TheMadScientist420 :)

updated the OP:

The state of my hack (2017-03-14)
  1. FULL takeover/hijack of boot -> DONE (the modifications required are not voiding the Android boot signing chain!)
  2. replace RAM disk -> DONE
  3. boot own RAM disk (TWRP!) -> DONE (atm TWRP 2.8.7-0)
  4. Upgrade bundled TWRP to latest version -> not started yet (build compatible with LL required)
  5. Prepare public release -> WIP (do not ask for ETA's!)
  6. boot efidroid instead of TWRP -> WIP (build ok but not booting)

so as op said do not mess with boot or recov partition remeber u still have locked bootloader
but this opens doors for say on ls991 stock based zv6 roms as long as when theyre made and flashed u use the stock zv6 kernal or i would assume flash any said in my case lolipop rom only and restore orig boot partitions will test this therory out to see if i trip the lg sigs and get secure boot errors
