What do you mean by "cannot unroot"? What happens when you try? Recovery log from after flashing the unSU zip? Etc...

Maybe you have flashed SuperSU several times and have destroyed the backup SU needs.
Flashing the original system.img is needed in that case.

Check if data/app/eu.chainfire.supersu-1 is still on your phone.
