What does a nandroid backup actually backup?

I currently have Stock rooted Gingerbread 2.3.5 on my phone. I want to install another ROM like CM or some other ROM on this phone. I DO NOT want to lose my text message history or my apps and their settings.

In other words if I install a ROM and something goes haywire I want the ability to completely restore my phone back from the state from when I backed it up. (Gingerbread 2.3.5 with root, all apps, settings, text history, etc.)

Will a nandroid backup do this and whats the fastest way to do so?
BTW I don't have CWM on here yet.....

Well I think you're a bit confused if you want the messages and call logs you will need a couple of apps from the appstore

1-Titanium Backup : very simple , it helps to backup your apps data (see tutorials to his correct use)

2-SMS backup and restore : it names says everything

3-Call logs back up and restore : same as above in fact same app dev

Well and after that you will have backed up your entire data now good flashing :)
