I got update 2 days ago.
There is nothing you can do for speeding up update to your watch. It depends on your area and exact watch model number. Just wait, it will come soon.
according to the vide in youtube the new update brings some fixes and the remote shutter options . so you can use the watch as a remote shutter for the phone's camera. but this also requires the new version of the health app as well
1.0.7.16 as well today, they also added 10 new watchfaces, 2 or 3 look quite nice 
I have two watches. One is stuck on 1.0.3.62 and the other is on the latest version. Same models etc so not sure how I can force the update. Did you work it out?

I think they are updating by serial number but old ones first. Mine bought recently and also did not update.
