Why change ROMs?

Apologies for this being very noobish, but I'm having a little trouble nailing this down. There's plenty of awesome information here about HOW to flash a new ROM and comparing the ROMs, but I think I could use a little advice about WHY to move from the stock ROM in the first place.

I recently upgraded to an AT&T Tilt from an old T-Mobile MDA (Wizard). With the Wizard, (AFAIK) flashing a cooked ROM was the only way to upgrade to WM6, so it was a no-brainer.

With the Tilt / Kaiser, my understanding is that the advantage of cooked ROMs is a) improving overall performance with registry and settings tweaks, and b) bundling in different sets of software to add functionality and improve the user interface. The latter of which can be mostly accomplished by manual installations, but the former would be a pain (if possible) to do manually.

Do I seem to be understanding this, or is there another part of the story I'm missing?

you got it :D also add getting rid of unwanted progs / apps and other bloatware which is pre-cooked in stock ROM's.....apart from the kick you get with extracting the best from your phone or if you are feeling bored etc etc...:D
