I believe the New south Wales font you've mentioned is because that its actually out of focus in the raw file since the aperture is really big on main lens, that gcam didnt know how to properly sharpen it since its not optimize for this camera at all.
But if you look the in focus area, stock camera was lack of detail and kinda look like painting, include the center cap you mentioned. Many source said that samsung didnt use the method that iphone 14 pro used which is cropping the 48MP main sensor to capture 2X photos, that allows the phone to use a whole 12MP to capture the scene.
I assume that samsung just using the 1X 12MP photo and crop it to 2X(so the photo only has 6MP) and then upscale to 12MP again using AI or some algorithm, thus why the poor quality.
I'm looking these on a pc with a monitor, here are some 100% zoom for compare.

Rims been deformed and lack of detail on center cap, fake detail on tires.

I just can't get what's the purpose other than 200 MP shot of this 200 MP sensor when it can't make a crop of it for lossless x2 zoom.

The camera software has really TONS things to be improved.

1. Is 200 cropped to same size as 2. Java with 2x .
Stock 2x is much more bad. It seems for 2x Samsung is not cropping the 200 mp. That was the test. Better is 3x, because own optic

Here are some pictures from vacation with S23, LMC17 Java v6 sharp.
Can't say if it was HDR+/HDR++/expo button on or not, because I did different shots with different settings.
And keep in mind this is base S23.

Really like the result! Except few, most are very great. Trees/leeves is not that good I think.
Note: these are personal pictures from vacation visiting a city, please do not judge/comment the picture itself, we have to stick to technical discussion.

One more thing is: I did some Photoshop on some of them, which is normal because it always requires some colors adjustments/contrast/...And I can achieve awesome result, really feel like working with pictures from a small "real camera", like Panasonic lx15.

    Hello everyone, friends! I am glad to present you new configs for S23u for AGC 8.8 V7.0 - Mazar V5.

    Changes and improvements:
    1) reworked shadows. Now the volume has become significantly larger in all conditions and in all shooting modes due to slightly different light capture, slightly greater dehaze and minor adjustments to the contrast settings. (Thanks to JavaSabr for the idea to raise the gamma contrast a little higher)
    2) applied a tone curve to all modes and lenses, adjusted to ensure uniform illumination of light throughout the entire image (HDR quality)
    3) Shutter speed in HDR NS, Night and Sport HDR NS from 1/7 reduced to 1/8 for even less blur
    4) slight correction of noise reduction on all modules and modes, also relatively due to changes in shutter speed in night modes
    5) saturation was slightly reduced based on the change in dehaze
    6) various minor adjustments to optimize performance

    The shooting modes have not changed, so their correct use is described in my previous post. All good photos, I try for you!)

    It's not really the best config that matters - just download the latest one and use it. The thing is that you have to know when to use them. For example javasabr for AGC has 3 main profiles, sharp, medium and soft - load any that you prefer - sharper photos have more noise, more contrast and are closer to stock Samsung photos. Next thing are the internal (sub)profiles - "disable", "ka", "Natural-ZSL" and so on - again you have to know when to use them when taking photos.
    "disable" is useful when taking photos in HDR - it is closest to stock Samsung HDR, other profiles are almost useless in high contrast, for example taking pictures in semi dark room with a window on a sunny day - either the window is "whited-out" or the room interior is too dark. "disable" profile works best in conjunction with HDR+ or HDRnet enabled. Both are still far from Samsung default light balance (but Samsung default is bad for other reasons).
    Color settings are personal preference, for me defaults are good for most situations BUT there are some with intensive colors (some deep red flowers) the get bluish-white tint instead of pure purple in default color profile - in such case using arnova color profile works wonders.
    Alternatively, instead of "disable" you can use HDR-NS profile - it "forces" Night Sight photos in daytime and shows basically the same results as "disable" with HDR+ - you should test how it works for moving objects before counting on it. Theoretically Sport-NS should work well in such case as it takes less pictures to combine, does it quicker and has lower chance of motion artefacts.
    Personally for everyday photos I use Vibrant-ZSL with arnova color profile since I mostly take pictures of static objects.
    Oh, and one thing, the latest javasabr AGC profile for S23U has (I think by mistake?) enabled "upscale images" (x1.3) by default so it takes 16Mpix photos - at least for soft variation.

    Instruction:
    1. Install GCam
    2. Extract the attached archive to your root FS
    3. Hold on the GCam icon and choose "Capture video"
    4. Double tap on the space between the shot button and the gallery and then import my config
    5. Done

    User interface:
    1. HDR++ frames count
    2. Google Auto White Balance
    3. Expo correction toggle (make all photos brighter)
    4. Disable ISO limit to use HDR+ in low light if you don't want to use HDR++
