miuipro have many customization than the stock miui

i'm now using last version 9.1.24 miuipro and no problem with the notch if you customize your dpi it flexibility with the new dpi

Question do I install this with TWRP and won't overwrite to stock recovery? Do I need DFE? (I prefer encryption). Lastly do you install gapps with it or is already included? I never flashed stock based rom so curious lol thanks.

Flash rom then flash fde. It will be ok. Ur twrp is still there. And this rom is stock base rom then no need to flash gapps.
